Recipe: Southwestern Salmon with Grilled Pineapple
- Six 4-oz salmon filets, boneless, skinless
- 6 slices pineapple, sliced 3/8” thick
- 1 cup mesclun greens
- 3 plum tomatoes, sliced
- 1 cucumber, sliced thin
- 1 1/2 tsp southwestern-style seasoning (or chili powder), to taste
- Cracked black pepper, to taste
Dressing
- 2 1/2 Tbsp balsamic vinegar
- 1/4 tsp olive oil
- 1 1/4 Tbsp lemon juice
Preparation
Season salmon with southwestern seasoning or chili powder. Sprinkle pineapple slices with cracked pepper. Grill salmon approximately 4 minutes per side until done. Grill pineapple until caramelized and warmed thoroughly. Toss mesclun greens, tomatoes, and cucumber with dressing. Top salad with salmon and pineapple.
